2 bunches green onion, finely chopped
4 boneless, skinless chicken breasts, cut into 1-inch cubes
1 cup mango cubes
2-3 cloves garlic
2 tablespoon red curry powder
1 cup coconut milk
1 red pepper chopped
2 tablespoons olive oil
Salt
Cilantro
Heat oil in large frying pan on medium heat. Add green onions and chopped garlic. Sauté until softened. Don't let the garlic burn. Add chicken breasts and sauté until slightly browned on the outside. Lower the heat and add red curry paste.. Mix over low heat until the curry powder roasts slightly and the chicken is coated. Add mango, red pepper and coconut milk. Cover and let simmer for 25-35 minutes. Serve with basamati rice.

8 Large (or 10 medium) potatoes 1 cup mayonnaise 1/2 cup sour cream 1/4 cup chopped celery 1/4 cup chopped onion (red onion adds a lot of color) 2 tsp sweet relish 1 tsp mustard 1/4 lb cooked bacon, crumbled 3 hard boiled eggs 1 tsp celery seed 1/2 tsp garlic powder 1/4 tsp dill weed 1/4 tsp paprika salt to taste pepper to taste
Peel potatoes and cut into large bite sized chunks. Boil potatoes until a fork pushed in a potato goes in with a slight resistance. Do not over cook. Set aside and allow to cool. Add all other ingredients, except eggs and paprika, and mix thoroughly. Mix gently to avoid ending up with mashed potatoes. Add salt and pepper to taste as you mix. Garnish top with sliced boiled eggs and sprinkle lightly with paprika.

24 King's Hawaiian dinner rolls 24 pieces good honey ham 24 small slices Swiss cheese 1/3 cup mayonnaise 1/3 cup miracle whip Poppy seed sauce: 1 Tblsablespoon poppyseeds 1 1/2 Tablespoons yellow mustard 1/2 cup butter, melted 1 Tablespoon minced onion1/2 teaspoon Worcestershire sauce
In a small bowl, mix together mayonnaise and miracle whip. Spread onto both sides of the center of each roll. Place a slice of ham and a slice of Swiss inside of each roll. Close rolls and place them into a large baking dish or heavy cookie sheet. Place very close together. In a medium bowl, whisk together all of the poppy seed sauce ingredients. Pour evenly over all of the sandwiches. You do not have to use all of the sauce! Just use enough to cover the tops. Let sit 10 minutes or until butter sets slightly. Cover with foil and bake at 350 degrees for 12-15 minutes or until cheese is melted. Uncover and cook for 2 additional minutes or until tops are slightly brown and crispy. Serve warm.

1 med. onion, finely chopped 2 tbsp. butter 1 (15 oz.) can tomato sauce 1 (4 oz.) can green chilies 1 tsp. salt 1/2 lb. Monterey Jack cheese (sliced or grated) 2-3 c. cooked chicken or ground beef 8 oz. tortilla chips 1 c. sour cream 1/2 c. grated Cheddar cheese
Preheat oven 350 degrees. Saute onion in butter, add tomato sauce, chilies and salt. Simmer uncovered 10 minutes. Layer in casserole dish: tortilla chips, Jack cheese, meat, sauce. Repeat layers. Bake 20 minutes. Remove from oven. Spread with sour cream and grated Cheddar cheese. Broil until cheese melts.

2 BAGS CHEETOS PUFFED CORN
1 STICK BUTTER
1 CUP BROWN SUGAR
¼ CUP LIGHT CORN SYRUP
2 PINCHES SALT
2 PINCHES BAKING SODA
Pour both bags puffed corn into large roasting pan. Bring butter, brown sugar, corn syrup & salt to a “bubbly” boil on the stove. Remove from heat and stir in Baking soda &stir until smooth and creamy. Evenly pour mixture over puffed corn in roasting pan. Put in 200 degree oven for 1 hour stirring every 15 minutes with a wooden spoon. Remove from oven and spread on wax paper to cool. Note: There is a reason this stuff is called crack, it is one of the most addictive foods ever for anyone with a sweet tooth, it is super easy and totally YUMMY!!!!!!!!!

30oz bag frozen hash browns
1lb sausage, browned & drained
8oz shredded cheddar cheese
8oz shredded mozzarella cheese
6 green onions, sliced and divided in half
12 eggs
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
Spray a large crock pot with non-stick spray then place half the hash browns into the bottom. Layer in half the cooked sausage, half the cheeses, and half the green onions, then repeat hash brown, sausage, and cheese layers. In a large bowl, whisk together eggs, milk, salt, and pepper, then drizzle over top. Cook on high for 4 hours, or low for 8 hours, or until eggs are set. Serve with remaining green onions, salsa, or guacamole.

1-1/2 pounds ground beef
1 package taco seasoning
1 (9 ounce) bag yellow corn tortilla chips
1-2 cups refried beans
1 bunch green onion (greens chopped)
Jalapeno peppers1/2 cup cilantro
1 cup shredded pepper jack cheese
1 cup shredded Mexican blend cheese
Guacamole
Sour cream
Salsa
Preheat oven to 400 degrees. In a pan, brown meat and add taco seasoning following the package directions. On a cookie tray lined with parchment paper, put 1/3 bag of tortilla chips on tray. Cover with 1/3 meat, beans, green onions, jalapeno peppers (to taste), cilantro and both cheeses. Bake for five to seven minutes until cheese has started to melt. Pull out of oven, add another layer, bake until starting to melt and then top with final layer of ingredients, adding a little extra cheese on top if wanted. Serve immediately from oven with guacamole, sour cream and salsa as condiments.

1 bun1 banana, peeled (split in half if too large for tiny mouths)1 Tbsp nut butter (peanut, almond or sunflower butter will work)toppings: fruit, nuts, oats, seeds, sweet toppings – and if you are really adventurous – try some bologna, cheese & honey! It tastes surprisingly yummy with pb and banana!)
Lightly toast bun. Add a slather of nut butter and additional spreadable toppings like jam. Add fruit. Top with toppings. Serve.

1 lb ground beef
1 tbls Worcestershire sauce (or to taste)
1 tbls ketchup
1 tsp dried minced onion
Salt & Pepper to taste
5 Large flour tortillas
shredded cheddar cheese
slice tomatoes
yellow mustard
Brown ground beef in large skillet & drain. Add Worcestershire sauce, ketchup, dried onion & salt & pepper to the beef & simmer for 5 minutes. Sprinkle shredded cheese down center of each tortilla. Add a few heaping tablespoons of the beef mixture on top of cheese. Spread some mustard on top of the beef along with some slices of tomato. Roll up tortilla burrito-style & place wraps on preheated indoor grill (I used my George Foreman). Grill wraps for about 5 minutes until cheese is melted. Cut on a diagonal & serve...C'mon your mouth is watering now isn't it?

4 cups chicken breast, cooked & chopped1 can black beans, rinsed & drained 6 green onions, diced 1/2 each of red, green, yellow, & orange bell peppers (or 2 whole bell peppers of your choice), diced 3 (8 oz.) blocks cream cheese, softened (not melted) 2 cans diced tomatoes with chiles (don’t drain) (Rotel or store brand, either works) 1/4 - 1/2 cup chicken stock 1 tsp cumin 1 1/2 cups sharp cheddar cheese, shredded 1 cup of picante sauce 38 large pasta shells, cooked al dente
Cook pasta shells in well salted, boiling water until al dente (still have a little bite to them) If you cook them too long, they will be difficult to stuff, plus they will have additional cooking time, once they are stuffed. Drain the pasta and set aside while you make the filling. Cook, drain and dice enough chicken breast to make 4 cups. I always have homemade chicken stock and pre-cooked diced chicken bagged in my freezer. You could use canned chicken broth if you prefer. To make the filling, mix diced chicken, drained black beans, green onions, diced peppers, and cumin in a large mixing bowl. Thoroughly incorporate all the ingredients....
