Miniature Breakfast Pot Pies

 

1lb Breakfast Sausage

½ lb Ham cubed into small cubes (About ¼"cubed)

1lb. Shredded Cheddar Cheese (or whatever cheese you prefer)

1 package Gravy Mix

40 Pillsbury Refrigerated Biscuits (The small ones in the roll)

 

Filling

 

-Ground up Sausage in a frying pan and drain grease

-Mix Gravy mix in with the Sausage per the mix’s instructions (I replaced the water it asked for and used milk, it made the filling very creamy and delicious)

-Mix the cubed Ham into the gravy and sausage mixture

-Let the filling cool to room temperature

 

Pot Pies

 

-Take a cupcake pan and butter each cup

-Open the refrigerated biscuits and using a rolling pin flatten each one out to about 1/8" to ¼" thick.

-Take each of the flattened biscuits and line each of the cup’s in the pan (this will seem to be difficult at first but will get easier)

-Take the room temperature filling and fill each of the biscuit lined cups to about 85% full

-Top each one with shredded cheese (make sure not to get the shredded cheese on the actual pan as this will create difficulty getting them out after they are cooked)

Cook them in the over per the temperature and time on the biscuit label, time will vary but about 12 to 15 minutes.
