2 tbls butter

3 tbls oil

1 bell pepper, diced

1/2 jalapeno, minced

1 Anaheim chile

1 Poblano chile

1 cup yellow onions, diced

2 tsps garlic

2 lbs ground beef, coarse grind

2 tbls chili powder

1 tsp paprika

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp cayenne pepper

1 tsp kosher salt

1 tsp freshly ground black pepper

1 cup tomato sauce

1 cup tomato paste

12 oz. lager beer

1 cup chicken stock

2 (15.5 oz.) cans pinto beans, with juice


In large stock pot over high heat heat oil. Add bell pepper, jalapeno, chiles and onion and cook until caramelized, about 5 minutes. Add garlic and saute a minute longer. Set veggies aside. Brown meats. Add veggies and spices to meat. Add in tomato sauce and paste and stir for 2 minutes. Stir in beer and chicken stock.
Add beans, lower heat and simmer for 2 hours.
