2 medium Zucchini
1 tsp. Margarine
3 oz. cooked, diced ham
1/2 c. chopped onion
2 Tbsp. Parsley
1/2 c. skim Milk
1/4 tsp. Salt
1/4 tsp. Pepper
1/8 tsp. Basil
1/8 tsp. Oregano
1/4 c. seasoned breadcrumbs
2 Tbsp. Parmesan cheese
Preheat oven to 350 degrees. Cut 2 medium Zucchini into thin slices, then
sauté in 1 tsp. margarine in a skillet about 5 minutes until tender. Arrange
Zucchini in an ungreased 9" pie plate. Sprinkle ham, onion, and parsley over the zucchini.
In a medium bowl
Beat the eggs. Add milk, salt, pepper, basil and oregano.
Then pour this mixture over the zucchini.
In a small bowl
Combine the breadcrumbs and Parmesan cheese.
Then sprinkle over the top of the zucchini.
Bake 30 minutes or until knife inserted comes out clean.
Let stand 5 minutes. Serves 4-6.
