Pierogi Casserole
Ingredients:
9 lasagna noodles, cooked according to directions
4 cups hot mashed potatoes (make your own from about 2 lbs potatoes cooked & mashed – OR --
use 2 tubs of premade mashed potatoes & heat according to directions)
1/2 cup (1/2 of 8oz tub) Chive & Onion Cream Cheese Spread
6 green onions, thinly sliced
3/4 to 1 cup bacon bits, divided (either packaged or homemade) (use more or less as you like)
2 cups Shredded Triple Cheddar Cheese with a Touch of Philadelphia, divided (the one with the
cream cheese added)
Directions:
Heat oven to 375 degrees.
While noodles are cooking, prepare potatoes and then combine hot potatoes, cream cheese
spread, 1/2 cup bacon, and 1 cup shredded cheese.
Spray 13x9" pan with cooking spray, then layer ingredients: 3 lasagna noodles topped with 1/3
of mashed potato mixture and repeat till all used (you’ll have 3 layers, ending with potato
mixture).
Top with remaining bacon and shredded cheese, cover with foil, and bake 30 minutes, or until
heated through.
Remove foil and bake for another 3 to 5 minutes, or until cheese is lightly browned.
Remove from oven and let stand 10 minutes before cutting into squares to serve. Good served
with a green salad.
