I have a recipe I want to share. This is the BEST dip ever!! I make it on the weekends to enjoy while we are watching football.


Chicken Enchilada Dip


1  10 oz can chicken

6 oz of mild enchilada sauce

1 small can of chopped green chiles

1 package of Cream Cheese

1 package of shredded mild cheddar or colby jack cheese


Put cream cheese in a bowl, put it in microwave to soften for about 40-50 seconds, then add 6 oz of enchilada sauce, drained can of chopped green chiles, package of shredded cheese (save 1/2 cup of the bag to use later). Stir up this mixture until completely mixed. Drain can of chicken, then put in a separate bowl and using a fork mash/shred then add chicken to cream cheese mixture. Pour chicken/cream cheese mixture in a baking dish (I use 8X8 dish but could use one a little bigger). Bake on 350 degrees for 20-25 minutes. Turn oven off and sprinkle remainder of shredded cheese (1/2 cup) on top of dip and leave in oven for about 5 minutes until cheese is melted on top. This is AWESOME served warm with tortilla chips. Leftovers can be stored in refrigerator then heated up in microwave for later use. Usually, there's not any left because this is so delicious!!!
