Darla's Doritos Tex-Mex Chicken Bake

1 1/2 - 2 cups shredded cooked chicken (I used boneless/skinless chicken breasts)
Kikkoman Ponzu Lime Sauce
2 cups shredded cheese (Monterrey Jack blend or Cheddar is fine)
1 - 10 oz. can cream of chicken soup
½ cup sour cream
1 can Ro-tel tomatoes (drained) or your favorite salsa
1 tablespoon taco seasoning (optional)
1 large bag Doritos

 

Preheat your oven to 350.  In a large bowl, take your cooked, shredded chicken and add a few dashes of the Kikkoman Ponzu Lime Sauce to it, making sure to mix well. Then, add 1 cup of cheese, cream of chicken soup, sour cream, Ro-tel tomatoes or salsa, and taco seasoning. Mix this up well. Next, grease a 9x13 casserole dish or baking pan and layer crushed Doritos on the bottom.  Layer on half of the chicken mixture.  Then, add another layer of crushed Doritos, followed by the rest of the chicken mixture.  Top the entire dish with the remaining shredded cheese and more crushed Doritos. Finally, cover with foil and bake for 20-25 minutes until it is bubbling hot.  Remove it from the oven and top with lettuce, tomato, sour cream, or homemade quacamole (which is what I looove!)
